Banana Mini Muffins

Bonus recipe this week!  Tiny’s bananas were getting old and starting to look grody:

Not totally grody, but the grody train has left the station.

so I decided to slap together some mini muffins!  I mostly made them up as I went.  I like to think I can do that because I’ve made muffins a few times before, but I might be getting too cocky.  If they don’t turn out, I’ll be appropriately humbled.

Makes: many mini muffins, fewer regular-sized muffins.  The recipe filled 1.5 mini muffin tins.


  • 2 pretty ripe bananas, smashed
  • 1.5 cups flour
  • 1 t baking powder
  • 1 t baking soda
  • 1/2 cup brown sugar
  • 1/2 cup melted butter
  • 2 eggs


  1. Preheat the oven to 375.
  2. Mix all the ingredients together with a fork.
  3. Spoon the batter into your muffin tin(s)
  4. Set a timer for 13 minutes.  Check the muffins with a toothpick and yank them out if it comes out clean!

Official verdict:  These are the cutest things I’ve ever made.  They are delicious and perfect and I’m not cocky, I’m just LORD OF THE MUFFINS.
