Bonus recipe this week! Tiny’s bananas were getting old and starting to look grody:
so I decided to slap together some mini muffins! I mostly made them up as I went. I like to think I can do that because I’ve made muffins a few times before, but I might be getting too cocky. If they don’t turn out, I’ll be appropriately humbled.
Makes: many mini muffins, fewer regular-sized muffins. The recipe filled 1.5 mini muffin tins.
- 2 pretty ripe bananas, smashed
- 1.5 cups flour
- 1 t baking powder
- 1 t baking soda
- 1/2 cup brown sugar
- 1/2 cup melted butter
- 2 eggs
- Preheat the oven to 375.
- Mix all the ingredients together with a fork.
- Spoon the batter into your muffin tin(s)
- Set a timer for 13 minutes. Check the muffins with a toothpick and yank them out if it comes out clean!
Official verdict: These are the cutest things I’ve ever made. They are delicious and perfect and I’m not cocky, I’m just LORD OF THE MUFFINS.
